Growing up I hated sandwiches.
I used to dread lunch time if I knew my lunch bag contained a sandwich. My mom grew up in Hong Kong and her idea of a sandwich was a piece of ham in between two slices of white bread. I ate a lot of ham and soggy white bread during my elementary school years.
Thanks to relatively inexpensive and tasty cafeteria food in high school (I sometimes still daydream about their spaghetti when I’m hungry in class) and a meal plan during my first year of university I was able to avoid the concept of a homemade sandwich for many years. Living extremely close to classes in my second year extended my break from the homemade sandwich. But working 35-40 hour weeks while taking night classes and training during the summer forced a reunion between the sandwich and myself. After playing around for a few weeks I have since discovered the perfect sandwich.
This perfect sandwich is extremely easy and quick to put together. Since the perfection of the ingredient list and ordering this sandwich is sought out and consumed at least 3 times a week. This combination of cream cheese, avocado, turkey, and apple is too delicious to resist. It also has a decent amount of healthy fats, protein, and carbs!
Cast of Characters:
- Toasted Everything Bagel
- Smoked-Salmon Flavoured Cream Cheese
- 1/2 Avocado, thinly sliced
- 3 slices of Smoked Turkey (I like to use Pillars)
- 1/3 Apple, thinly sliced (I like to use BIG Fijis, Pink Ladys, or Granny Smiths)
After placing the topside of the bagel in proper position slice the sandwich in half and serve with a few apple slices.
